Asparagus Soup

Asparagus Soup: A Springtime Delight

Ingredients:

  • 2 lbs of asparagus (Chopped into 2 inch pieces)
  • 1/4 lemon (juiced)
  • 4 cloves of garlic (sliced)
  • 2 shallots (sliced)
  • 1/2 package of chicken broth
  • 1/4 cup heavy cream
  • Salt and pepper to taste
  • 1/2 tsp dried thyme
  • 1/3 cup butter

Instructions:

  1. In a soup pot on medium heat, add the butter.
  2. Add in the shallots and garlic and cook for about 2 minutes.
  3. Add in the asparagus and cook for about 3 minutes.
  4. Add in the chicken broth and cook with the lid on for about 5-6 minutes.
  5. Add in the lemon juice.
  6. Put the soup into a blender and blend until smooth.
  7. Pour the soup back into the soup pot, and add in the heavy cream, salt and pepper to taste.
  8. Serve the soup hot, garnished with dried thyme, and enjoy!
