Cream of Mushroom Soup

Mushrooms are a versatile and delicious ingredient that can be used in a variety of dishes. One of our favorite ways to enjoy mushrooms is in a hearty and comforting soup. This recipe is perfect for a cold winter evening or for when you want to whip up a quick and easy dinner. The combination of cremini, portobello and shiitake mushrooms give this soup a great depth of flavor and the cream and thyme garnish add a nice touch of richness and freshness. Mushroom Soup: A Savory and Satisfying Recipe

Ingredients:

  • 1 package of cremini mushrooms
  • 4 portobello mushrooms
  • 1 package of shiitake mushrooms
  • 1/2 package of chicken broth
  • 4 cloves of garlic (sliced)
  • 1 shallot (sliced)
  • 1/2 onion (sliced)
  • 1/4 cup of heavy cream + 1 tbsp of cream
  • A little bit of thyme for garnish
  • Salt and pepper to taste

Instructions:

  1. Begin by preparing all of your ingredients. Slice the mushrooms, garlic, shallot, and onion, and set them aside.
  2. In a pot on medium heat, cook the garlic, onion, and shallot for about 2 minutes.
  3. Add in the mushrooms and cook with a lid on for about 5 minutes.
  4. Remove a few mushrooms to use as garnish, if desired.
  5. Once the mushrooms have been cooked, add in the chicken broth and cook for about 1 minute.
  6. Add all the mushrooms and broth into a blender and blend on high speed for 1 minute.
  7. Return the soup back into the pot and cook on low heat.
  8. Add in the heavy cream and season with salt and pepper to taste.
  9. Serve the soup in bowls, garnished with the reserved mushrooms, a drizzle of cream, and a sprinkle of thyme.
