Ingredients:
1/2 shallot, diced
3 cloves of garlic, minced
1/2 medium carrot, diced
200g of leftover rice
2 eggs, scrambled
2 tbsp soy sauce
1 tsp black pepper
Instructions:
In a skillet on medium heat, add oil into the pan.
Add in shallots, garlic, carrot and cook for about 2 mins.
Add in the rice and cook till carrots are tender. (About 5 mins)
Add in soy sauce, scrambled eggs and black pepper. Toss for about 1 min.
