Ingredients:

  • 1/2 shallot, diced
  • 3 cloves of garlic, minced
  • 1/2 medium carrot, diced
  • 200g of leftover rice
  • 2 eggs, scrambled
  • 2 tbsp soy sauce
  • 1 tsp black pepper

Instructions:

  1. In a skillet on medium heat, add oil into the pan.
  2. Add in shallots, garlic, carrot and cook for about 2 mins.
  3. Add in the rice and cook till carrots are tender. (About 5 mins)
