Air Fryer Chicken Breast and Vegetable Pasta: A Perfectly Balanced Meal

Ingredients:

  • 1 chicken breast (pounded)
  • 1/2 cup of pasta (boiled)
  • 1 tsp lemon juice

Chicken seasoning:

  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp salt
  • 1 tsp oregano
  • 1/2 tsp pepper

Pasta ingredients:

  • 5 cloves of garlic (halved)
  • 4-6 tomatoes (halved)
  • 1 lbs. asparagus (chopped to 3 inch pieces)
  • 3-4 cremini mushrooms (sliced)
  • 2 tbsp olive oil
  • 1 block of feta cheese

Instructions:

  1. In a small bowl, mix together the chicken seasoning (olive oil, paprika, salt, oregano, and pepper). Rub the seasoning onto the chicken breast and let it sit for about 30 minutes.
  2. Preheat the oven to 400˚F.
  3. On a baking tray lined with parchment paper, assemble all the pasta ingredients (garlic, tomatoes, asparagus, mushrooms, and olive oil).
  4. Bake for about 30-40 minutes or until the tomatoes are tender.
  5. Preheat the air fryer to 370˚F – 375˚F.
  6. Place the chicken breast in the air fryer and cook for about 5 minutes on each side or until the internal temperature reaches 165°F.
  7. Season the feta cheese and vegetables with salt and pepper to taste. Then, add the pasta and mix everything together.
  8. Plate the dish with the pasta on the bottom and the sliced chicken on top.
  9. Drizzle some lemon juice on top of the chicken.
