Air Fryer Salmon: A Healthy and Tasty Way to Enjoy Fish
Ingredients:
2 portions of salmon (frozen or fresh)
3 cloves of roasted garlic
1 spoonful of carrot puree
1 whole shallot (diced)
4 thai chilis (sliced)
300g of baby corn (halved)
100g sugar snap peas (halved)
1 tbsp oyster sauce
1/2 cup of water
Salt and pepper to taste
Salmon marinade:
3 tbsp soy sauce
1 tsp honey
1 tsp sesame oil
Instructions:
Combine the salmon marinade and let the salmon sit in the marinade for about 30-40 minutes, flipping halfway through to marinate both sides evenly.
In a medium skillet on medium heat, add 1 tbsp of mild oil.
Add in the shallots first and cook until browned, about 2 minutes.
Add in baby corn, sugar snap peas, and thai chilis. Cook for about 3 minutes.
Add in oyster sauce and 1/2 cup of water. Cook the vegetables until all the water has evaporated.
Preheat the air fryer to 400°F for about 3 minutes.
Spray some oil in the air fryer, then add in the salmon. Cook at 400°F for 6 minutes, then flip and cook for another 4 more minutes or until the salmon is cooked through.
Assemble the dish by spooning vegetables on top of the cooked salmon.
Enjoy the dish with your favorite side dish and some nice garlic bread.
