Beef Kofta Kebab: A Grilled Delight
Ingredients:
16-19 wooden skewers (soak in water for about 30 min – 1 hr)
1.5 lbs of ground beef
1 shallot
3 cloves of garlic
1/2 cup parsley
1/2 tsp allspice
1 tsp smoked paprika
1 1/2 tsp cumin
1/2 tsp cinnamon
1/2 tsp ground cardamom seeds
1/2 tsp ground nutmeg
Salt and pepper to taste
Red pepper flakes for garnish
Instructions:
Preheat your grill to medium heat (or stove top cast iron griddle).
In a small bowl, mix together all the dry spices (allspice, smoked paprika, cumin, cinnamon, ground cardamom seeds, and nutmeg).
In a food processor, finely chop the garlic, parsley, and shallot.
In a large mixing bowl, combine the ground beef with the dry spice mix and the garlic, parsley, and shallot mixture. Mix well.
Prepare a baking tray with parchment paper.
Take small portions of the meat mixture and form it into long shapes. Carefully thread the meat onto the wooden skewers, making sure they are tightly packed. Once they are shaped, place the skewers on the baking tray.
Grill the skewers for about 3-5 minutes on each side or until fully cooked.
Garnish with red pepper flakes and serve with hummus and your favorite fragrant rice.
