Healthy Herbal Chicken Soup Recipe

Ingredients:

  • 1 whole chicken
  • 1 carrot (peeled and chopped into 2 inch pieces)
  • 1/2 of a cube of chicken stock
  • 1 box of unsalted chicken broth
  • 3 cloves of garlic Chinese herbs (any combinations will do, or buy an herbal soup mix)
  • 4-5 dried red dates
  • 1/4 cup of dried black fungus
  • 6 whole cremini mushrooms
  • 5 small chinese bok choy
  • Rice Vermicelli
  • Salt and pepper to taste
  • Water enough to fill the soup to the max line in the instant pot

Instructions:

1. Add the chicken, stock cube, broth, water, carrot, red dates, fungus, mushrooms, garlic, and Chinese herbs into the instant pot.

2. Set the instant pot to the soup setting for 30 mins on high pressure.

3. Wash the bok choy.

4. Once the soup is done, set the instant pot to the sauté setting.

5. Put in the bok choy and vermicelli, boil for 2 mins then serve.

6. Enjoy!!
