Roasted Leeks

Roasted Leeks Recipe

Ingredients:

  • 2 leeks (cleaned and sliced in half)
  • 1 tsp smoked paprika
  • 1 tsp mustard
  • 3 – 4 tbsp olive oil
  • 1/2 tsp pepper
  • 1/2 tsp salt
  • 1 cup shredded parmesan

Instructions:

  1. Preheat the oven to 425°F.
  2. Mix together the smoked paprika, salt, pepper, mustard, and olive oil in a small bowl.
  3. Spread the sauce with a brush onto the leeks and then cook for about 20-25 minutes in the oven.
  4. Once the leeks are golden brown and tender, take them out of the oven and let them cool for a few minutes.
  5. Serve the roasted leeks with your favorite main course and sprinkle the shredded parmesan on top.
