Scallion Soy Chicken: A Flavorful and Easy-to-Make Dish
Ingredients:
1 whole chicken (around 3 lbs)
2 cloves garlic (sliced)
2 tbsp dark soy
2 tbsp light soy
1 tbsp shaoxing wine
1/2 tbsp sesame oil
1 tsp salt
1/2 tsp black pepper
1 ginger (sliced)
1 cup water
4 stalks of green onion (split one to put on top of chicken at the end, rest cut into halves)
3-5 red thai chilis (chopped)
Instructions:
Fill a kettle with water and bring to a boil.
While the water is boiling, clean the chicken with cold water and drain.
When the water is boiled, pour the water over the chicken to tighten the chicken skin. (Do this on both sides)
Drain the hot water and then make the marinade.
In a bowl, combine the dark soy, light soy, shoaxing wine, sesame oil, salt and pepper.
Rub the chicken with half of the marinade.
Let the chicken marinate for about 2-4 hours. Flip the chicken halfway through for an even marination.
Heat a cast iron pot to medium heat, then add some oil, and put in the ginger slices, garlic, and green onion.
Place the marinated chicken in the pot, then add the remaining sauce and water, cover and cook for about 30-40 minutes or until the chicken is cooked through.
Once the chicken is cooked through, remove from heat.
In a small skillet, add in some oil and heat to medium-high heat.
Garnish the chicken with the green onion and thai chilis.
