Ingredients:
1 bag of small potatoes(1.5 lbs)
1 tbsp dried thyme
3 tbsp unsalted butter
3 tbsp olive oil
5-6 cloves of garlic (minced)
1 tbsp smoked paprika
Salt and pepper to taste
Instructions:
In a pot with water enough to cover all the potatoes, add 1 tsp of salt. Boil the potato until fork tender, about 13 mins.
Prepare a baking tray and flatten each potato on the tray using a cup or the back of a fork.
Preheat the air fryer for 3 mins at 400°F.
Brush all of the smashed potatoes with olive oil. Season with salt, pepper and paprika.
Place the potatoes into the air fryer, keeping them in one layer (you may need to do multiple batches).
Cook for about 15 mins in the air fryer.
In a pan, heat up the butter on medium heat until it’s browned, then turn off the heat and add in the minced garlic.
Plate the potatoes and then garnish with the garlic browned butter and thyme.
