Squid Ink PastaRecipe
Ingredients:
1 bunch of squid ink pasta
1 tomato (chopped)
2 tbsp tomato paste
6 cloves of garlic (sliced)
3 tbsp shrimp stock
1 tbsp of pasta water
500g of peeled prawns
1/2 box of white beech mushrooms (chopped to 1 inch pieces)
3 slices of compound butter
1 lemon (juiced)
Salt and pepper to taste
Instructions:
Begin by cooking the pasta in a pot of salted boiling water, according to the package instructions, until just under al dente, which should take around 5-6 minutes.
While the pasta is boiling, in a saucepan on medium heat, add in 2 tbsp of olive oil.
Spread the olive oil evenly in the pan, then add in the garlic slices. Cook for about 2 minutes.
Add in the tomato paste and cook until the tomato paste has slightly changed its color, about 2 minutes.
Toss in the tomatoes, shrimp stock, pasta water, chili flakes, and pepper, then cook for another 2 minutes.
Add in the prawns and mushrooms, and cook for about 3 minutes or until the prawns are pink and cooked through.
Drain the pasta, then add the pasta into the sauce and toss them together.
Add in the compound butter and juice of 1 lemon, toss and let it cook for 2 more minutes.
