Chinese Lamb Baozi

Chinese Lamb Buns: A Delicious and Flavorful Recipe

Ingredients:

Bao Dough:

  • 400g flour
  • 200g warm water (110°F)
  • 2 1/2 tsp active dry yeast
  • 1 tsp sugar

Meat Filling:

  • 400g minced lamb
  • 1/4 cup spiced water (1 tsp Sichuan peppercorn, 2 star anise, 1 tsp cumin, 1/4 cup hot water)
  • 1 tsp white pepper
  • 1 tsp salt
  • 2 tbsp soy sauce
  • 1 tbsp dark soy sauce
  • 1 tsp sesame oil
  • 1 tbsp shaoxing wine
  • 1/2 cup leeks (finely chopped)

Instructions:

  1. The first step is to make the yeast mixture. Combine the warm water, yeast, and sugar in a bowl. Stir to combine and let it sit for 10 minutes until it starts to froth.
  2. In a large bowl, mix the yeast mixture with the flour until it forms a dough. If the dough is too dry, add water, 5g at a time, until it comes together.
  3. Knead the dough for a few minutes until it’s smooth, then cover it with a cloth and let it rise for 1 hour.
  4. Next, it’s time to make the filling. In a separate bowl, mix together the minced lamb, spiced water, white pepper, salt, soy sauce, dark soy, sesame oil, shoaling wine, and leeks.
  5. Roll the dough out into a log shape and divide it into 50g portions. Flatten each portion into a round shape, add around 50g of the meat filling, and fold it to close.
  6. Prepare the steamer by adding water to the pot. Place the buns in the steamer basket and let them cook for 20 minutes over high heat.
  7. And that’s it! Serve the buns hot and enjoy the delicious flavor of the succulent minced lamb filling.
