BBQ Chicken Skewers: A flavourful way to eat chicken!
Ingredients:
6 skinless boneless chicken thighs (chopped)
Chicken Marinade Ingredients:
5 cloves of garlic (minced)
1 ginger (sliced, 5 slices)
1/2 shallot (sliced)
1 tbsp shaoxing wine
1 tbsp dark soy sauce
2 tbsp soy sauce
1 tsp white pepper
BBQ Seasoning Ingredients:
1 tsp sichuan peppercorn (grounded)
1/2 tsp cumin seeds (grounded)
1/2 tsp fennel seeds (grounded)
1/2 tsp five spice powder
1/2 tsp black pepper
1 1/2 tsp cumin powder
3 tsp chili powder
1/2 block of chicken essence / msg
Pinch of salt
Instructions:
In a large bowl, mix the chicken, garlic, ginger, shallot, Shaoxing wine, dark soy sauce, soy sauce, and white pepper together. Let the mixture marinate for 30-40 minutes.
While the chicken is marinating, mix the Sichuan peppercorn, cumin seeds, fennel seeds, five-spice powder, black pepper, cumin powder, chili powder, chicken essence/MSG, and salt in a separate bowl to create the BBQ seasoning.
Skewer the marinated chicken onto the wooden skewers, making sure to leave a bit of space in between each piece.
Heat a cast-iron pan on medium heat and brush it with oil. Place the chicken skewers onto the pan and cook for about 6 minutes on each side, brushing each skewer with oil and adding the BBQ seasoning to each side as you flip them.
