Spicy Tuna and Okaka Onigiri

Onigiri, also known as Japanese rice balls, are a popular snack in Japan and have gained popularity all over the world. These small, triangular-shaped snacks are made with Japanese rice and are usually filled with a variety of ingredients, from fish to vegetables. Today, we will explore two variations of onigiri: Spicy Tuna and Okaka (Bonito Flakes). These two fillings are easy to make and add an extra layer of flavor to the classic rice ball!

Spicy Tuna and Okaka Onigiri Recipe

Ingredients:

  • 2-3 cups of Japanese rice
  • 2 sheets of seaweed, sliced into wide strips

Spicy Tuna Filling:

  • 1 can of tuna
  • 2-4 Thai chilis, chopped
  • 2-3 tbsp of Kewpie mayo
  • 1 tsp garlic powder

Okaka Filling:

  • 1/3 cup of bonito flakes
  • 1 tbsp of soy sauce
  • 1 tbsp white sesame seeds

Instructions:

  1. In a small bowl, combine all the ingredients for the spicy tuna filling. Set aside.
  2. Heat a small saucepan over medium heat. Toast the bonito flakes until browned, then remove from heat and add in the soy sauce and white sesame seeds. Toss and set aside.
  3. Once the rice has cooled slightly, start assembling the onigiri. If you have a mold, add some rice to the mold, then add the tuna filling, and top with more rice. Press down firmly to shape the onigiri. (If you don’t have a mold, form the rice into a ball, make a dent in the center, and add the filling. Reform the rice into a triangle shape.)
  4. Remove the onigiri from the mold and wrap a strip of seaweed around the bottom of the onigiri to hold its shape.
  5. Repeat the process with the remaining rice and filling.
  6. Serve and enjoy your homemade Spicy Tuna and Okaka Onigiri!
