Indian Yellow Turmeric Rice

Ingredients:

  • 2 cups of basmati rice
  • 1 shallot, sliced
  • 1 bay leaf
  • 5-6 cardamom pods
  • 1 tsp cumin powder
  • 5-6 cloves
  • 1/2 tsp Saigon cinnamon or 1 cinnamon stick
  • 1 mace
  • 1 star anise
  • 3 tbsp butter
  • 2-3 tsp turmeric
  • 1 tbsp garlic ginger paste
  • 1 rice cup of coconut milk
  • 1 1/2 rice cup of chicken stock (or enough liquid to fill in to cook the rice)
  • 1 tsp salt
  • 1 stalk of cilantro
  • 1 tsp sliced almonds

Instructions:

  1. Begin by combining all the dry spices (bay leaf, cardamom, cumin powder, cloves, cinnamon, mace, star anise) in a small bowl.
  2. In a saucepan over medium-low heat, add the butter and dry spices. Fry for about 2 minutes, then add the sliced shallots and cook for an additional 2 minutes. Add the turmeric, mix well, and then add the garlic ginger paste. Set aside.
  3. Wash the rice and add it to a rice cooker. Add the coconut milk and chicken stock to the line in the pot.
  4. Add the spice mixture and salt to the rice pot.
  5. Cook the rice in the rice cooker on any mode you prefer.
  6. Once the rice is cooked, garnish it with sliced almonds and cilantro.
