One-Pan Salmon & Veggies

This delicious salmon and vegetable dish is perfect for a quick and healthy weeknight meal. The combination of fresh herbs, garlic, and Thai chilis creates a flavorful sauce that pairs perfectly with the tender salmon and crisp vegetables!

A Quick and Easy Meal – One-Pan Salmon & Veggies Recipe:

Ingredients:

  • 2 fillets of salmon
  • 1 bunch of asparagus
  • 10 cherry tomatoes
  • 2-4 mushrooms (any kind, sliced)
  • 1 cup of herbs (mix of dill, parsley, basil, chives and cilantro)
  • 6 cloves of garlic
  • 4 tbsp olive oil
  • 3-4 thai chilis
  • 1/2 lemon (juiced)
  • 1/2 tsp sliced almonds
  • 1/4 tsp chili flakes
  • Salt & Pepper to taste

Instructions:

  1. Begin by making the herb sauce. In a food processor, blend 3 cloves of garlic, 2 tbsp olive oil, and 1/2 lemon juice with the herb mix until it forms a nice sauce. Add salt and pepper to taste, and set aside.
  2. Preheat your oven to 400°F.
  3. Next, prepare your vegetables. Mince 3 cloves of garlic, slice the Thai chilis, remove the ends of the asparagus, and slice the mushrooms.
  4. In a lined baking tray, place the two fillets of salmon, followed by the rest of the vegetables.
  5. Spread the herb sauce all over the two pieces of salmon, coating them with the flavorful sauce.
  6. Drizzle 2 tbsp of olive oil all over the vegetables, and then salt and pepper them to taste. Add the minced garlic and sliced Thai chilis onto the vegetables.
  7. Bake the salmon and vegetables for about 12 minutes, or until the salmon is cooked to your liking.
  8. Once the salmon is cooked, remove it from the oven and garnish with sliced almonds and chili flakes.
  9. Serve hot and enjoy this flavorful and healthy meal!
