A Quick and Easy Meal – One-Pan Salmon & Veggies Recipe:
Ingredients:
- 2 fillets of salmon
- 1 bunch of asparagus
- 10 cherry tomatoes
- 2-4 mushrooms (any kind, sliced)
- 1 cup of herbs (mix of dill, parsley, basil, chives and cilantro)
- 6 cloves of garlic
- 4 tbsp olive oil
- 3-4 thai chilis
- 1/2 lemon (juiced)
- 1/2 tsp sliced almonds
- 1/4 tsp chili flakes
- Salt & Pepper to taste
Instructions:
- Begin by making the herb sauce. In a food processor, blend 3 cloves of garlic, 2 tbsp olive oil, and 1/2 lemon juice with the herb mix until it forms a nice sauce. Add salt and pepper to taste, and set aside.
- Preheat your oven to 400°F.
- Next, prepare your vegetables. Mince 3 cloves of garlic, slice the Thai chilis, remove the ends of the asparagus, and slice the mushrooms.
- In a lined baking tray, place the two fillets of salmon, followed by the rest of the vegetables.
- Spread the herb sauce all over the two pieces of salmon, coating them with the flavorful sauce.
- Drizzle 2 tbsp of olive oil all over the vegetables, and then salt and pepper them to taste. Add the minced garlic and sliced Thai chilis onto the vegetables.
- Bake the salmon and vegetables for about 12 minutes, or until the salmon is cooked to your liking.
- Once the salmon is cooked, remove it from the oven and garnish with sliced almonds and chili flakes.
- Serve hot and enjoy this flavorful and healthy meal!
