Broccoli & Pea Soup

Ingredients:

  • 500g chopped broccoli

  • 1 litre chicken stock
  • 1/4 cup heavy cream
  • Half a lemon (optional)
  • 1/4 tsp chili flakes (optional)
  • 2-3 mint leaves (optional)
  • Salt and pepper to taste

  1. Heat some oil in a medium pot on medium heat. Add in the sliced onion and chopped garlic, and fry until they are slightly browned.

  3. Pour in the chicken stock and cook with the lid on for about 5-8 minutes, or until the broccoli is tender.
  4. Optional: remove a few of the broccoli and peas for garnish.
  5. Transfer the soup into a blender and blend until smooth.
  6. Pour the soup back into the pot on low heat, and add in the heavy cream, salt, and pepper. Cook for about 1 more minute and then remove from heat.
  7. Garnish the soup with chili flakes, broccoli, peas, and mint leaves.
