Honey Fig & Avocado Toast

I’m excited to be back after a brief break! I’m launching a new seasonal series where I’ll be creating fresh dishes using the best seasonal ingredients. The first ingredient I’m excited to feature is figs! While they might not be super popular yet, they’re incredibly delicious and sweet, especially at this time of year!

I can’t wait to introduce you to this new and delicious toast creation I’ve come up with! This toast is not just visually stunning but also incredibly delicious. The creamy avocado and tangy labneh balance the sweetness of the figs and honey, while the pistachios and apricots add the perfect finishing touch. It’s a unique, indulgent treat that’s so easy to make—you absolutely need to give it a try!

Honey Fig & Avocado Toast:

Ingredients (Serves 2):

  • 2 slices of your favorite bread (sourdough or whole grain works well)
  • 2 ripe avocados, mashed
  • 4 tablespoons labneh
  • 2-3 fresh figs, quartered
  • A bunch of arugula
  • 1 tablespoon Black Forest honey (a rich, dark, and aromatic honey)
  • 2 tablespoons pistachios, roughly chopped
  • 2 dried apricots, chopped into small pieces
  • Salt and pepper
  • Olive oil

Instructions:

  1. Toast the bread: Lightly toast the bread slices until golden and crisp.
  2. Mash the avocado: In a small bowl, mash the two ripe avocados with a pinch of salt and pepper. You can add a drizzle of olive oil for extra creaminess if desired.
  3. Spread the labneh: Once the bread is toasted, spread 2 tablespoons of labneh on each slice.
  4. Add avocado mash: Spoon the mashed avocado evenly on top of the labneh layer.
  5. Top with figs, arugula: Arrange the quartered figs on top of the avocado, then add the arugula.
  6. Add the toppings: Scatter the chopped pistachios and dried apricot pieces over the toast for a mix of sweetness and crunch.
  7. Drizzle with Black Forest honey: Drizzle the rich Black Forest honey over the toast. This honey’s deep flavor adds a bold sweetness that complements the fruit and labneh.
