Smashed Potato Pizzas:
Ingredients (serves 3-4) :
- 10-14 Mini potatoes
- Olive oil
- Salt and pepper
- 1/2 cup grated Parmesan cheese
- 2-3 cloves garlic, finely minced
- Your choice of pizza toppings: marinara sauce, shredded mozzarella, pepperoni, veggies, fresh basil, etc.
Instructions:
- Prepare the Potatoes: Preheat your oven to 400°F (200°C). Boil mini potatoes in salted water until fork-tender, about 10-15 minutes.
- Smash the Potatoes: Drain the potatoes and place them on a parchment-lined baking sheet. Using the back of a fork or a potato masher, gently smash each potato to about 1/2-inch thickness, keeping them mostly intact.
- Parmesan Garlic Base:
• Make the Parmesan Garlic Mixture: In a small bowl, mix the grated Parmesan cheese and minced garlic.
• Season the Potatoes: Drizzle each smashed potato with olive oil and sprinkle with salt and pepper.
