Ever since my husband and I started customizing our own avocado smoothie with pistachios in Dubai, we’ve been hooked on this creamy, nutty drink! Now that we’re home, I wanted to recreate that perfect blend but with a little extra kick. Enter: cranberry sauce! This tangy addition takes the smoothie to a whole new level, adding just the right amount of sweetness and brightness to balance the richness of the avocado and pistachios. Lime Mint Refresher (Serves 5)
Ingredients:
- 5 small cucumbers (or 2 large cucumbers)
- 1 bunch fresh mint leaves
- 3–4 limes (juiced)
- 1/2 cup water
- 4 cans of Sprite
- Ice
- Optional: Your favorite spirit
Instructions:
- Prepare the base: Peel and chop the cucumbers, then place them in a blender along with the mint leaves, lime juice, and water. Blend until smooth.
- Strain the juice: Pour the blended mixture through a fine sieve or cheesecloth into a bowl, pressing gently to extract all the juice. Discard the pulp.
- Mix the drink: Transfer the cucumber, lime, and mint juice into a large pitcher. Stir in three cans of Sprite.
- Assemble: Fill glasses with ice and pour the drink into each one, leaving a little room at the top. Use the fourth can of Sprite to top off each glass for extra fizz.
- Serve: Garnish with a sprig of mint or a lime wedge if desired. Add a splash of your favorite spirit for a boozy twist!
