Tofu Hummus with Roasted Red Pepper Recipe:
Ingredients (serves 4) :
- 1 cup silken tofu (drained)
- 1 cup canned chickpeas (drained and rinsed)
- 1 large roasted red pepper
- 2 tbsp tahini1 garlic clove (minced)
- 2 tbsp lemon juice (freshly squeezed)
- 1 tsp ground cumin
- Salt (to taste)
- Optional Garnish: Olive oil, smoked paprika, chopped parsley
Instructions:
- Prepare Ingredients: Drain silken tofu and rinse chickpeas. Pat dry jarred red pepper or roast a fresh one until charred, then peel and deseed.
- Blend the Base: Combine tofu, chickpeas, red pepper, tahini, garlic, lemon juice, and cumin in a blender/food processor.
- Blend Until Smooth: Process until creamy, scraping sides as needed. Adjust consistency by adding water (1 tbsp at a time).
- Season and Adjust: Taste and season with salt. Add more lemon or cumin to balance flavor as desired.
- Serve and Garnish: Transfer to a bowl. Drizzle with olive oil, sprinkle smoked paprika, and garnish with parsley.
- Enjoy: Serve alongside kebab meals or with warm pita, pita chips, or veggie sticks.
