Pomegranate Herb Couscous Recipe:

Ingredients (serves 2) :

  • 1/2 cup couscous
  • 2/3 cup vegetable broth (or water)
  • 1 tablespoon olive oil
  • 1/4 cup fresh pomegranate seeds
  • 2 tablespoons chopped parsley
  • 1 tablespoon chopped mint (optional)
  • 2 tablespoons toasted pistachios or almonds
  • Juice and zest of 1/2 lemon
  • Salt and pepper, to taste

Instructions:
